When the weather starts to get a bit frosty I enjoy making up big batches of soups and stews. There is just something so comforting about eating soup when it’s cold outside. I enjoy piling my bowl high with crackers, too! However, the soup we are making today doesn’t require you to get the cracker barrel out as it contains homemade dumplings. Yum! have you ever heard of beef soup cooked in the slow cooker with dumplings? I like to think of this recipe as more of a stew, actually. The broth gets pretty thick once you incorporate the dumplings. Well, at least it did for me. Anyway, give this amazing recipe a shot!

As my grandparents began to get up there in years they received help from a public assistance program known as “Meals on Wheels.” As a little girl, i can remember waiting with my wheelchair bound grandma by the door for her delivery. The man that delivered the meals looked like he should be receiving the food as well due to his age but you know? He just kept right on a truckin’! Quite impressive! Anyway, one of the dishes they would bring once a month was swiss steak. My grandma would share hers with me and that would be my first introduction to this marvelous treat.

Hello, folks! How is everyone this morning? My children are currently under a two-hour delay for school so I let the the little sweethearts sleep in for a bit. It’s almost time to go wake them up. I have to say, this is the first casserole that I’ve ever come across that incorporates poppy seeds into the mix. Why, just the other day I was watching “The Wizard of Oz” with my family and thought to myself, “Wow, I wonder what I can make with those seeds?” during the poppy scene. Since moving to Pennsylvania from Michigan, I’ve learned how to cook quite a few new and exciting foods. For example, I never really knew what apple dumplings were before moving here or how to make “gobs” as they like to call them around these parts. Where I come from, we call them “whoopie pies.” The folks in western PA sure do love their casseroles and for good reason, too! They are spectacular. A lot of the influence behind casserole dishes such as ham and noodle are the Amish people. For centuries, the Amish have been cooking up wonderful dishes that are staples in their households. Ham and noodle casserole is one of these delicious staples.

I’ve made quite a few Amish friends since moving out here and they have graciously taught me how to make a few of their amazing dishes. I attend a Mennonite church so I have access to a variety of different people. I really enjoy how the ladies have embraced me and taught me some wonderful tricks to utilize around the kitchen. i can recall telling some of my new friends that i never seem to have time to get wholesome dinners on the table on certain days and they opened my eyes up to the wonderful world of casseroles. I hope you enjoy this delicious Pennsylvania Dutch ham and noodle casserole as much as my family and I did.
