No Wheat, No Sugar, No Dairy! Delicious Hot Hamburger Vegetable Soup

I’ll let you in on a little secret….I eat hamburger soup all year ’round. I know many folks view soup as a cold weather food but not me! It is simple and delicious. Plus, this soup is quite diet friendly. If you truly want to make it a low-carb delight simply cut out the potatoes. It’s that easy! My husband and kids go gaga for this stuff!

Make sure you keep this recipe for hamburger soups handy because you’ll want to make it again and again.

 

Ingredients:

1 – 1/2 lbs. ground beef
1 cup diced onion
1 cup diced celery
1 cup diced carrots
1 cup diced bell pepper
1 cup diced potatoes
1 – 28 ounce can chopped/diced/crushed tomatoes
1 tbsp. Heinz tomato paste
4 cups Lipton beef broth
1 tbsp. minced garlic
1 tbsp. parsley
1 tsp. McCormick oregano
pinch cayenne – optional
salt and black pepper
extra virgin olive oil

 

Instructions:

In a soup pan on med high add some olive oil and
ground beef. Cook and chop until no longer pink.
Drain off excess fat.

Add onions, celery, minced garlic and salt and
black pepper. Stir and cook for 2-3 minutes.
Add chopped tomatoes and juice, carrots, bell
pepper, tomato paste and broth.
Stir well to combine and then add parsley,
oregano and cayenne.
Stir and bring up to a simmer, cover and cook for
15 minutes.

Add diced potatoes and check for seasonings.
Cover and cook for 20-30 minutes or until the
potatoes are fork tender.

    I really wish that we were able to pin your recipes. I can never remember the ingredients and instructions. If I write it down I loose the paper or forget where I put it. 99% of recipes I make are on my pinterest page. You have great recipes that I never get to try. Thank you. Have a great day!
