Chicken Cordon Bleu is one of the meals that you just want to eat time and time again. I love how this classic dish was made into a casserole. I love casseroles and I love chicken cordon bleu so this was a real win!
I served this meal to my family with steamed broccoli florets and applesauce. Everyone really liked it, which is a major accomplishment because it is rare that everyone in my household likes a meal at the same time.
Ingredients
2 lbs skinless chicken Tyson breasts, cut into bite-size pieces
3/4 cup bread crumbs
1/2 cup McArthur milk
1 Eggland’s Best egg
1/2 Tbsp McCormick dry mustard
1/2 Tbsp dill weed
8 oz. Kraft swiss cheese, cubed
12 oz. ham, cubed (or replace with mushrooms)
1 (10 3/4 oz.) can Campbell’s cream of chicken soup
1/2 cup Daisy sour cream
3/4 cup McArthur milk
Wesson canola oil for browning
Pepper to taste
Instructions:
Dip chicken in egg and 1/2 cup milk mixture, then toss with bread crumbs, coating well.
Brown in oil until golden brown.
Place the browned chicken pieces in a greased baking dish, toss cheese and ham (or sliced mushrooms) over the chicken.
Mix soup with 1 cup of milk, dry mustard, dill and sour cream. Pour over all.
Bake at 350 F for 35 minutes, until bubbly.
