three bean salad

Three bean salad is a staple dish served at every church potluck I’ve ever attended.

When I was growing up I can remember my church having potluck suppers quite often. You can bet your bottom dollar that there would be at least two bowls of three bean salad on the table. One of them was typically made by my grandmother. I’d always choose grandma’s over the others. Anyway, I found a delicious recipe for three bean salad on the Melady Cooks food blog and it reminds me so much of my grandma’s!

The longer you let this salad marinate the more pickled the beans become and I LOVE that!

For as long as I can remember, apple carrot bread has been my favorite homemade treat.

My husband and I were invited to a Super Bowl party last year. I had been doing really good with my healthy eating goals and I knew there would be nothing but junk food at the gathering. I mean, I couldn’t expect people to swap out their brownies and nachos for something healthy haha! So, I decided to make my own “dessert” and brought along this homemade apple carrot bread. It was a hit!

Wouldn’t you know that everyone was chowing on my apple carrot bread instead of the donuts and cookies? Apple carrot bread is a touchdown!

My entire family loves this from scratch spinach dip recipe and yours will, too.

This recipe for homemade spinach dip has recently become a staple appetizer in my household. For one, it’s healthy for you and for two, it’s really easy to make. There is a trick to this spinach dip that you probably wouldn’t even recognize if you didn’t know any better. Want to know what it is? There isn’t any mayo in this recipe. No, siree! It is Greek yogurt that gives this spinach dip its creamy texture.

I don’t personally have any issues with mayo but the Greek yogurt gives this spinach dip a nice flavor.

These ham Frito Fritters are happenin’!

When my husband has his buddies over for the football game I love making different snacks and appetizers that everyone will love. Anyone can set out chips and salsa. I like my snacks to be unique. I was browsing the recipe archives on my favorite blogger’s website and came across ham Frito fritters. They looked so good in all of their deep fried glory! I just knew that I had to make them. I am so glad that I did.

I recommend making a double batch of ham Frito fritters because they go fast!

Surprise your spouse with hearty Reuben egg rolls.

When I was pregnant with my first child I had an undeniable craving for Reuben sandwiches. I remember eating them every single day for a week when i was about 38 weeks along. At my doctor’s appointment, I had gained 8 pounds over the course of 7 days! My doctor told me to lay off the Reubens because of the sodium LOL! Anyway, had these Reuben egg rolls been around back then I’d have retained so much water I would have started floating.

These Reuben egg rolls are very easy to make and they taste amazing. You’ll love the homemade dressing!

Be adventurous and eat your ravioli in a bowl of soup.

We all pretty much enjoy eating ravioli in my house. I try to fix an Italian meal about once a week as my family really digs them. Typically, I will make lasagna or spaghetti. The other day, I was perusing the internet and came across a recipe for ravioli soup. It was over on the Melady Cooks food blog. The pictures alone made my mouth water. You can’t go wrong with ravioli soup as it is super easy to make!

My husband and kids LOVED this recipe and asked me to make it again sometime very soon. I served it with hunks of garlic toast.

How many of you have a staple recipe that is served during all holiday dinners?

For my family, that recipe would be scalloped potatoes. We all love them! My grandma, God rest her soul, was famous (at least in our family) for making some of the best scalloped potatoes this side of the Mississippi. Her spuds always tasted amazing and came out of the oven with that golden brown crust on top that made your mouth water. I think grandma would be proud of the following recipe for scalloped potatoes.

Now, my granny never put cheese in her scalloped potatoes so adding that simple ingredient to the recipe is taking a risk. my family is very picky about their taters. I think they will love them 🙂

I bet you are just dying to get the details on this delightful recipe, aren’t you? Wait no longer and mosey on over to the next page for a complete list of ingredients and instructions. Happy cooking!
