All I Want For My Birthday Is a Ring – THIS Ring!

A warm slice of this apple ring bread, with a scoop of ice cream on the side and a huge mug filled with strong coffee… I would call it the Best Breakfast Ever!

Ok, maybe it wouldn’t be very healthy to have this for breakfast every morning, but on special occasions I would say, go for it! I am already thinking of making a cream cheese frosting to go with this next time. I think it would make this a very festive dessert and a great end to a lovely holiday family meal. How would you serve this apple ring bread?

 

Ingredients

Dough

2 cups Gold Medal all-purpose flour

1 packet dried yeast

1 tsp baking powder

1 sachet vanilla sugar

1 large Eggland’s egg

2 tbsp oil

3 tbsp Domino sugar and a pinch of salt

water as needed

Filling:

4 gala apples, peeled, small cubed

1 tbsp toasted sesame seeds

2 tbsp Domino sugar

half a lemon

1 egg yolk for brushing

Whipped cream and ice cream to serve

garnish: sliced almonds (optional)

 

Instructions:

Mix all dough ingredients in a large mixing bowl. I used a wooden spoon to mix it.

Add water a little at a time until you get the right consistency.

Transfer onto working surface and knead until smooth and elastic.

Shape into a ball and put back in the bowl. Cover and let rise until it has doubled in size. Approximately 1 hour.

When the dough has risen, peel apples and cut into small cubes. Squeeze lemon over apple cubes, add sesame seeds and sugar. Stir.

Roll the dough using a rolling-pin, then spread apples filling over it.

Roll into a log and combine the ends to make a ring shape.

Use scissors to cut small sections around the ring (don’t cut all the way through). Cover with a towel and let rest for 30 minutes.

Brush with beaten egg yolk. Sprinkle with sliced almonds, if preferred.

Bake in preheated oven at 350F until golden brown.
