Yes, it’s right after Thanksgiving (ok, 4 days later), and I am still feeling very lazy!
So I didn’t really feel like baking and only made this Cranberry Poke Cake for super lazy people. A cake box mix, some cranberry sauce, whipped cream and dried cranberries is pretty much all you need.
This cake is uh-mazing! Plus, it’s super easy to make. I plan to make this little gem for both my Thanksgiving and Christmas dinners. cranberries are a food that is eaten throughout the entire holiday season so it’s all good 🙂
Ingredients
1 box Duncan Hines birthday cake mix (white or yellow cake mix works just fine too)
1 can Ocean Spray cranberry sauce, with whole berries
1 cup dried cranberries
1½ cups heavy cream
2 teaspoons Argo cornstarch
2 teaspoons Domino powdered sugar
Instructions:
Prepare the cake according to package directions but with one egg and ⅓ of the oil less!
Once you take the cake out of the oven, let cool only two minutes, then poke holes in it with the end of a wooden spoon
Heat cranberry sauce in the microwave for 1 minute, stir
Pour over cake, spreading out with a big spoon to make sure the holes get filled
Place in fridge for one hour
Now beat the heavy cream on medium speed with an electric mixer for one minute
Add cornstarch and powdered sugar and beat on high speed until very stiff
Spread whipped cream over the cake
Sprinkle dried cranberries on top of the cream and place back in fridge until you serve it
