The recipe calls for bittersweet chocolate – you could use different kinds but you may want to adjust the amount of sugar, if you opt for sweeter kind of chocolate.
The hardest part of this recipe is waiting for the fudge to completely cool, before cutting it into pieces. I swear, I checked on it every five minutes to see if it was ready! But the flavor is well worth the wait! If you wrap each piece in parchment paper, you’ll get a super pretty present for friends and family. I guarantee they’re going to love it!
Ingredients
1 cup heavy whipping cream
1/2 cup Bailey’s Irish Cream liqueur
1 1/2 cups Domino granulated sugar
1 1/2 cups Lyle’s golden syrup or light corn syrup
1 teaspoon kosher salt
9 ounces bittersweet chocolate, finely chopped
Flaky sea salt for finishing
Instructions:
Line a 9″x9″ pan with parchment paper and set aside.
In a large, heavy bottomed pan, combine the whipping cream, Irish cream liqueur, granulated sugar, golden syrup, and salt. Bring to a boil, cooking until mixture reaches 250 degrees on a candy thermometer.
Remove from heat and allow to sit for 5 minutes.
Stir in chopped chocolate and pour into prepared pan. Immediately sprinkle with sea salt.
Allow to cool completely. Cut into 1 inch squares and wrap in squares of parchment paper or cellphone.
Store in an airtight container.
