Little Bites Of American Pride: Red, White, And Blue Shortcake Yummies

The first time I made these yummy red, white, and blue strawberry shortcake bites was a few years ago during the Fourth of July festivities. I wanted to bring a snack to the firework display for my family and me to enjoy as we watched the show. These treats are great tot ake along to an event such as a fireworks show because they do not require any utensils and you can pop ’em right into your mouth. My kids and husband absolutely loved them and I know you will, too!

I love how these little treats are portable.  Eat ’em as you watch the fireworks!

 

Ingredients

18-24 large strawberries

1 c ready made strawberry shortcake sponge cake, more or less

1 can(s) Redi-Whip whipped cream

18-24 blueberries, fresh

Instructions

1. Clean strawberries and blueberries. Set blueberries aside.

2. Pare off stem tops of strawberries and using a paring knife or a melon baller, scoop out inside flesh of the strawberries. Put in bowl.

3. Dice or shred cakes into small bits and add to strawberry flesh into bowl. Stir.

4. Stuff the strawberries with cake mixture, top with whipped cream and add a blueberry. Enjoy!

5. Variations: Discard strawberry flesh and use only cake bits. A JIFFY yellow cake mix, baked according to package directions may be used for cake. Add a splash of either almond flavoring, extract or Amaretto to strawberry flesh before stirring in cake bits. Sweeten the strawberry flesh with just a little bit of sugar or artificial sweetener. Use one of the strawberry filler recipes on JAP and dollop on top of cake filler, top with whipped cream and blueberry.
