Whenever I go to the movie theater I am always the first gal in line to get one of those big old tubs of buttery popcorn. However, I really wish they would offer caramel corn. I LOVE caramel corn! It’s so crunchy and sweet. Yummo! I think the next time I go see a movie I’m going to make the following recipe and smuggle in some of my own caramel corn. The recipe below is super easy to make and only requires a handful of ingredients. Anyone can master this recipe and have a fun treat to serve to their family on movie night. Do any of you have a family movie night planned?

I like to take it a step further and toss in some peanuts and M&M’s to the caramel corn. My kiddos love it!

Ingredients:

Instructions:

Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.

Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.

Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.

Pour syrup over warm popcorn, stirring to coat evenly.

Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.

Cool; break apart. Store in tightly covered container.
