One of the things that I love most about Amish Friendship Soup is how versatile it is. You can literally add any type of veggies to the mix that you want. If you plan to mix up the dry soup first and give it away as a gift might I suggest using a few cupfuls of dehydrated (dried) mixed veggies. These veggies can range from corn to carrots and everything in between. If you don’t have access to packaged dehydrated veggies feel free to make your own either in the dehydrator or the oven. With this recipe for Homemade Amish Friendship Soup, you can either prepare a delicious, classically Amish soup for your family to enjoy for supper, or you can put together a dry soup mix in a jar to gift to someone special as a gift. What’s so great about Amish friendship recipes is that they allow you to prepare some of your favorite dishes in an easily shareable form, so that others can make the same meals you love in their own kitchens. This easy soup recipe includes yummy ingredients like onion, lentils, rice and macaroni noodles, along with ground beef, making it a hearty dinner meal the whole family will love.

What a special gift this soup would make! My church often hosts a Secret Sister event and I think I’ll be making my “sister” the dry version of this fantastic soup-in-a-jar.

 

Ingredients

1/2 cup dry split peas, sorted and rinsed

1/2 cup dried lentils, sorted and rinsed

1/3 cup Lipton beef bouillon granules

1/4 cup pearl barley

1/4 cup dried minced onion

2 teaspoons Italian seasoning

1 cup small pasta, ditalini or tubetti

1 pound ground beef

3 quarts 3 quarts water

1 (28-ounce) can Hunt’s diced tomatoes, undrained

Instructions

In a 1 ½ pint jar, layer the first seven ingredients in the order listed. Seal.
Remove pasta from the top of jar to be used later.
In a large pot, brown ground beef and drain.
Return cooked ground beef to the pot, add the water, tomatoes, and the remaining soup ingredients except the pasta.
Bring to a boil, reduce heat, cover and simmer for 45 minutes.
Add pasta and simmer for 20-25 minutes or until pasta, peas, lentils and barley are tender.
