Gold Rush Corn Bake Is Like Eating A Pan Full Of Yummy Treasure

Corn casserole is one of those dishes that we seem to eat during every holiday meal.

My sister is the one who usually prepares it. She makes a cornmeal corn casserole that is totally yummy. I am all for keeping with traditional recipes but sometimes my taste buds cry out for something new and adventurous. That’s where this Gold Rush corn bake comes into play. You see, it isn’t baked like a traditional corn casserole but rather cooked in a skillet. Now, if you have a well-seasoned cast iron skillet this “bake” is going to come out amazing!

Although the recipe doesn’t call for it, I like to add a few sprinkles of cayenne pepper to the mix. I only add a pinch as I use organic red pepper and boy oh boy is it HOT. A little goes a long way, believe me. You want the casserole to be a little spicy but not so hot that it no longers resembles a comfort food LOL!

    I think your recipe should read 4 TABLESPOONS of melted butter. Either that or the directions should read teaspoon. 🙂
