Cinderella’s “Night Before The Ball” Oatmeal Recipe

This is an oatmeal recipe that your entire family will love. Feed them well on a cold morning before sending them off to school and work. I know that there is nothing better than a tummy full of warm breakfast on a cold day. I’ll be honest, there are days I feed my kids cold cereal before the bus comes but those days are rare, especially during the winter months. I don’t want my kid’s teeth chattering all the way to the bus stop 🙂

Seriously, how can something so delicious be so healthy for you?

Ingredients

2 c milk

1/2 c canned 100% pure pumpkin puree

1 Tbsp sucanat (or substitute light brown sugar)

1/2 tsp McCormick pumpkin pie spice

3/4 c Quaker old-fashioned rolled oats

Instructions

Whisk milk, pumpkin puree, brown sugar, and pumpkin pie spice in a small saucepan. Cover and bring it to a gentle boil over medium-low heat.

Once the milk mixture starts to create bubbles around the edges of the pot (about 4-5minutes), stir in the oats. Cook according to the package directions. Oats should be soft and creamy. Remove the pot from heat, cover, and let it stand for at least 15 minutes, or until oatmeal thickens and cools.
