Oh. My. Goodness. You, guys, this recipe for coconut cake has brought me to my knees. Seriously, wowser! At first glance, I didn’t think I would be able to hack making this gorgeous confection of sweetened coconut flakes and soft cakey goodness, however, I surprised myself with my culinary skills, and you will, too!
This cake is delectable, beautiful, and fit for a bride on her wedding day. One glance at this coconut cake and you’ll be drawn into a scape of sweet dreams, ponies, baby rabbits, and rosebuds. I know I’m making it sound a bit girly, but don’t let that fool you, the guys will love this dreamboat of a cake, too! I know my husband and boys sure did!

Sounds really yummy but for great quick version just bake a French Vanilla or Lemon Cake mix according to pkg directions in 13 x 9 pan. Remove from oven & using handle of wooden spoon make holes across cake. Pour 1 can sweetened condensed milk & let soak into warm cake & through the holes. Cool & spread Cool whip on cake & as much coconut as you like. Great do ahead & keeps well if you have any left to keep. Refrigerate.

Instead of baking in 3 pans, make 2 layers and then split time in half. The cake will soak up the filling much faster. My mom has made a similar cake for years, and I make it now, that’s how we do it.

Hi, I creamed the butter, the two cream cheeses, then gradually added the icing sugar and it was perfect but when I added the cream coconut and vanilla it turned runny. I added another cup of icing sugar, still runny. Now it is in the freezer. I am hoping the butter and cheese will harden a bit. I have made icing many times before but I have never added one quarter cup liquid. Anything I should have done differently?
