A simple ingredient that jazzes up this classic picnic side dish like nobody’s business.

Most of us love potato salad. This picnic side dish is about as American as you can get (besides apple pie!) when it comes to good old fashioned BBQ food. Whenever I am at a backyard picnic, I often head right for the potato salad before anything else. I even walk right on by the hot dogs! I was thinking of ways that I could jazz up my potato salad a bit. You, know, add a few ingredients that might put a different spin on the flavor and texture.

That’s when I came across this recipe. Bacon makes a crazy good addition to anything, but especially in potato salad. I enjoy using maple bacon in mine because the smoky-sweet flavor gives my spuds the kick of flavor that they need.

Speaking of maple bacon…I recently placed an order with a friend who sells Tastefully Simple products and they have a phenomenal maple bacon seasoning shaker. So good!

    I add bacon, dill pickle and in the dressing I use curry powder. Plenty of celery & onion. Also sugar in the dressing. My family no longer like the traditional.

    I would not like bacon in my potato salad. 2 things I hate is people who throw a pile of cheese on top of food and the other is bacon on everything, thats my preference only so enjoy if you like it, I like extra celery and maybe a little extra salt with miracle whip instead of sour crème and mayo and a good amount of boiled eggs..

      I have been putting bacon in my potato salad for over 30 years. I did it LONG before putting bacon in everything was the fad……I concer I hate dumping tons of cheese…..?

    onion in any shape, also some sweet pickle and a little pickle juice pepper salt and sprinkle some peprika on top, and skip bacon and celery I use ground celery seed extra egg . my sons love theier salad mashed the way gramma made it

    I always add red radishes, bell pepper, and bacon plus extra apple cider vinegar. I make the best potato salad!

    I use every thing but the eggs, and use red onions, dill & sweet all chopped and a bit of dill weed! I have made it for weddings in the past! People called it Wedding salad

    In the South, it’s Dukes mayo and perhaps a couple tablespoons of Durkee’s. If you’re making German potato salad, bacon is a must. However, in traditional potato salad, I’d leave it out. It’s not going to stay crispy after being refrigerated.

    Mix about half mayo and other half sour cream plus bacon and add shredded cheddar

    I use Red, White & Gold potatos, eggs, celery, Sweet pickle, Real Mayo, Yellow Mustard, salt, pepper, garnish of sliced egg & celery leaf on top and paprika sprinkled on top. When Im with mi familia in SoCal, they make me throw err I mean add small black olives..

    Ps… Everything I put in it is fresh, I buy all ingredients & condiments, spices the morning Im going to make it. Even if I have things already open in fridge or spice shelf…

    I don’t like any potato salad that uses pickle juice or mayo… I use only Spin Blend Salad Dressing in mine. a touch of Tarragon Vinegar… I also add Red Radishes and scallions with a lot of eggs. Bacon would add a nice crunch.

    I use chopped bacon,undrained, it adds a better taste and chopped green olives. I either put some vinegar or green olive juice in it. Also use brown mustard or dijon.I make more macaroni salad than potatoe because my potatoes are mushy or hard. Can never get them perfect!

    Sorry I’m a purist. Love my bacon but not in my potato salad. Onion, hard-boiled eggs, maybe celery, mayonnaise (homemade preferred), and mustard. Maybe a little celery seed and other seasonings but let the goodness of mayo slicked potato shine through afterall, it is called POTATO salad not potato bacon and everything else you can throw in salad.
