This dessert pie was even easier than what I had expected it to be. Like I said, I’m not a huge dessert fan usually, so I don’t make a whole lot of them. I saw the simple ingredients list and the even easier instructions and figured I couldn’t mess this one up. When it was done and the hubby came home from work and saw it, his eyes lit right up. He had tried it at the restaurant that day too and fell in love with it just like I did. Now that I can make this at home, we can be reminded of that awesome trip to Kentucky any time that we want. I can’t wait to go back there and see even more of the beautiful state soon!

Check out what they are saying about this recipe over at Relative Taste:

“This pie is super fast and easy to make. Putting bananas under the layer of whipped cream is optional, but I definitely recommend doing it. Save a few crumbs from your graham crackers to sprinkle over the top to make it look  pretty!”

You can make this as complex or as simple as you want… it’s totally up to you!

Ingredients

1 1/2 cup Domino sugar

1 1/2 cup coconut, flaked

1 1/2 cup Honey Maid graham cracker crumbs

1 1/2 cup pecans, coarsely chopped

7 egg whites, unbeaten

9 inch Pillsbury unbaked pie shell

Whipped cream

Sliced bananas

Instructions

In large bowl combine first five ingredients.

Mix well by hand.

Pour into unbaked pie shell.

Bake in preheated 325° oven for 25 to 30 minutes….Do not over bake. Center should be gooey.

Serve topped with sliced bananas & whipped cream.

Suggestions for substitution for coconut. Pure looks good but no one in my family likes coconut

Are you sure you don’t beat the egg whites. that just does not sound like the correct way to use them. Elouise

Stirring the ingredients will make enough “substance” to hold it together, sort of like a meringue. Doesn’t this sound delicious? My problem is with the bananas. I probably won’t add them to the top. They just don’t seem to go with the rest of the ingredients. But it still sounds yummy!
