The other day, i was chatting on the phone with my mother. She lives all the way in Michigan and I live 8 hours away in western Pennsylvania. we got to chatting about different meals that she made while I was growing up. My mom reminded me of my love for meatloaf and mashed potatoes. She always made this delicious sauce that went on top of the meatloaf that she painted on about 10 minutes before the food was done cooking. I later discovered that this “special sauce” was merely ketchup. It browned and congealed a bit due to the heat and tasted way better than “just ketchup!”
Anyway, i mentioned to my mom that I loved how well the meatloaf and mashed potatoes went together and she said, “Honey, why don’t you just make a meatloaf casserole and if you like the two items so much?” It was like bells went off in my brain.
