This recipe was great. I am not a big quinoa fan, and find it hard to eat unless you really spice it up. I only used a 1/2 cup quinoa as there is just two of us, 1 & 1/2 cup chicken broth, garlic salt and 2 cloves garlic, brought to a boil and simmered for 20 mins, added 1/2 cup of cheddar cause I didn’t have mozzarella and voila, easy tasty cheesy quinoa! Thank you!
You can add whatever seasonings you like on top of the garlic. I’d say for picky kids, keep it simple. I think Italian seasoning would be great with this! Maybe you could base it off of your main dish but either way it’s a favorite and I’m so relieved we finally found a quinoa dish to look forward to.
Ingredients

2 cups quinoa, uncooked

3 cloves garlic, minced

1/2 cup KRAFT Finely Shredded Mozzarella Cheese

1-1/2 tsp. salt
Directions

Cook quinoa as directed on package, adding garlic to the cooking water along with the quinoa.

Add remaining ingredients; cook and stir for a couple of minutes. or until cheese is completely melted.

Quick Tip: If you like, scoop this into a casserole dish and top with shredded cheese then place it under the broiler until bubbly and browned.
