For Those Mornings When You Just Can’t

I was going to tell you about this morning and how I ended up with a shattered coffee pot, a screaming 5-year-old and a missing shoe, but just thinking about it made my blood pressure go through the roof. So instead I went to my stash and got a huge chocolate bar, and decided to tell you about this awesome breakfast casserole recipe I tried yesterday.

I have a feeling this casserole is going to be a lifesaver at my house – and I also believe we are going to have this just about every other day. The great this about this recipe is that it’s so versatile; you can tweak the ingredients or the seasonings to get new flavors each time you make this.

You know what else? I think this casserole is hearty enough to be served as dinner, too. With fresh green salad and dinner rolls on the side, you won’t have to deal with those hungry monsters anymore! In that case, just prepare this early in the morning and it will be ready for baking when dinnertime comes.

My breakfast preferences have changed over time. When I was a kid, my favorite food for breakfast was rice, fried eggs, and any type of breakfast meat—sausages, bacon, or beef strips. When I became a teenager, my breakfast preferences went from rice to bread. I still loved eggs and meat in the morning, but instead of rice, I preferred bread. College was a bit hectic. My breakfasts were usually composed of milk and cereal; or peanut butter and jelly sandwiches—the easy grab-and-go breakfast. When I started working, my breakfast was composed of anything that I could snatch off the fridge, which was convenient but not really ideal. Who wouldn’t want a proper breakfast?

 

On weekends, I love preparing myself a hearty breakfast meal, something that I could enjoy while reading the morning newspaper and drinking my fresh cup of coffee. Since I love sugarless, black coffee, I usually prepare pancakes or waffles with berry syrup and whipped cream. But there are also times when sugar just overwhelms me. So I long for something that’s not sweet instead. This sausage hashbrown casserole that I found over at All Recipes is something that I haven’t tried before. It’s something different, easy to make, and looks really good to eat.

If you can’t decide whether you want the eggs and meat on the side, or some other eggs and toast combination, now you can have everything in one bite, with this cheesy hearty casserole.

Not many people think of casserole, when they think of breakfast, but it’s actually a great recipe for when you have a group of people to feed (that’s usually when last minute breakfast is decided, anyways).  This recipe serves 8 and is ready in under 40 minutes.

When you want an easy and quick dinner, it’s hard to go wrong with a bit of sausage and a healthy mix of veggies and/or fruit.  This Oven-Roasted Autumn Medley combines a modest amount of sausage with a few basic spices and a hearty mix of apple and sweet potatoes to make a great casserole for fall that is both savory and budget-friendly.

 

This recipe is great on the flavor and low on the hassle.  It’s also low on budget strain (not to mention low on time pressure, as it only takes about an hour to prep  and cook).  I’d say it’s a great choice for a hectic midweek dinner in fall, though if you love sausage and sweet potatoes as much as I do, you may be hankering for this year-round.
