Hi, guys! So, lately I’ve been on the hunt for different types of salads to serve at picnics and BBQs. During the summer months, we tend to go camping quite a bit and hold backyard parties for our friends and family. I always serve the traditional potato and macaroni salad, but I want something a little different.
I experimented with shredded carrots, coconut oil, apple cider vinegar, and sea salt…and the results were amazing. For something so light and so simple, this raw carrot salad has major flavor. I even added a dash of parsley for color. You should give it a try!
