You can make this salad a little lighter and sweeter by adding some grapes or chopped apples – or choosing low-fat ingredients, like explained on the next page. Don’t worry if you’re not planning for a party; you can make half a batch or even just 1/4, without a hassle.
I love serving this salad as a sandwich (I use either croissants or toast) but you could definitely serve it as a side dish, with almost any entree you can think of. I am dying to try this with cheesy scalloped potatoes – somehow I have a feeling that combination would completely tantalize my taste buds!
