My sister was someone who always wanted to be a housewife. When we were very little, we would play house and talk about our futures with our baby dolls.

She used to say that she wanted to have at least 10 kids. I thought she was crazy, but it seemed to fit her personality. We grew up and I went off to the city to start my career. She stayed in our hometown and married her high school sweetheart. The instantly started working on that family. They ended up having five kids and she decided that was going to be enough for them, whew. Makes me tired just thinking about it.

Five kids is still a great big job. She was lucky and got to stay home. Her husband took over his father’s business, so they were pretty well set. In her free time, my sister loved to cook and experiment in the kitchen. That was after all of her kids grew out of the stage where they needed constant attention.

The last time I went over there, she had made this macaroni and cheese brie that was like something out of a fancy restaurant. It was so succulent and tasty, I could have eaten the whole thing myself. I figured if my sister could make it, I could make it too. I went home and gave it a whirl.

Mac and cheese is one of my favorite meals to enjoy on a lazy afternoon after work or school. It is usually quite easy to make and provides lots so you can share (but believe me, you do not have to!) My only problem with boxed Mac and Cheese is that it does not provide enough creaminess for me. It is tasty, sure. But the milk just blends with the powdered cheese and stays liquid-y. That is why I thought of making something that has more substance.

 

This mac and cheese recipe has lots of creaminess because it is made with real cheese. When blended with milk, that cheese melts and becomes gooey and spreads quite easily over the pasta. It also stays creamy and keeps the shells moist and from drying up. It is the perfect Sunday afternoon pick me up when you are feeling down about having to go back to work on Monday morning. Or, it is an easy weeknight meal that is kid proof and totally yummy. It is also a great side dish for dinner with guests (or consider making it the main dish by chopping up some chicken and throwing it in as well). However you choose to make it and for whatever occasion, you are going to love chowing this baby up!

I am one of those people who think that when you put cheese in any average dish, it will transform into at least something tolerable or something completely superb. Yes, I am a cheese person! I put cheese in almost everything, which is why one of my favorite home-cooked meals is Macaroni and Cheese.

 

If you were to attend one of our family reunions, you would notice one of my parents’ most favorite ways of embarrassing me is telling everyone about my childhood misbehavior. They will start with how chubby a kid I was and then end it with a tale of how they used to bribe me into going to school by promising Macaroni and Cheese for dinner. With the way I am able to eat half of a baking pan, I have to grudgingly agree that it might be true.

Mac and Cheese. I’ve pretty much loved it all my life. When I was in college I used to make it in the microwave. I would empty into a bowl, add water, and presto. Lunch. And sometimes dinner. It was basically a staple in my diet.

 

I don’t make it from the box anymore but it’s still one of my favorite things to eat.  It’s the perfect side dish, main dish, or midnight snack. What’s not to love? So when I ran across this extra creamy and cheesy recipe, I was excited to try it!

This Ain’t Your Grandma’s Meatloaf!

This surely isn’t your Grandma’s meatloaf recipe! This meatloaf is very flavorful – it’s loaded with spices that all work so well with ground meat. Then to top it off it has Mac and Cheese in the center!

This is a combination I would have never even thought of, but the second I had my first bite, it made me say: “How come I didn’t think of this before?” It is the perfect dish; no side dishes necessary. Or, you could say the side dish is already included! As soon as you cut a tasty slice of this meatloaf, you’ll see the wonderful mac and cheese surprise that was hidden inside.

If you want a little bit of kick to it, do what I did and add poblano, Chipotle and adobo. This would be a great way to show off at your next potluck or tailgate! I just made it for a family dinner and people were amazed – everyone loved it!
