If you have some boneless, skinless chicken breasts that you need to use, and you want to kick it up a notch without too much of a time or labor investment, give this Cajun Chicken & Rice recipe a try. Some recipes from Louisiana and the Deep South can be real labors of love. This one is rather quick and easy, yet it still serves up plenty of good Cajun flavor. It makes for a great weeknight dinner option.

 

I opted to go without the cheddar cheese (which you add at the end, if using), as I wanted a bit of a cleaner, more spicy dish. If you want the dish to be a bit on the softer and creamier side, or if you just really love cheese, then you will want to include it. It’s a delicious recipe, either way – just a matter of your personal preference.

Classic cheesecakes can be delicious, but they have a reputation for being fairly heavy.  If you want something similar that is a bit lighter and more warm weather-appropriate, you should give this Roasted Strawberry & Ginger Ricotta Cheesecake a try.  It has a delicious and decadent flavor without weighing you down.

 

I am a devout cheesecake lover, but even I have to admit that cheesecakes can be extremely heavy, especially if they have the rich toppings and crust that I like the most.  I thought that I would give a ricotta cheesecake a try.  I have to say, I was very pleased.  It was rather light and fluffy, allowing me to enjoy all of those delightful sweet and piquant flavors without getting too bogged down after a few bites.  (And who wants to get bogged down on a hot late-summer day?)

In a food rut?  Feel like breaking out the grill but don’t want anything too complicated or too same-old, same-old?  Then try this Honey Sriracha Orange Chicken!  Wow everyone with the name, blow them away with the flavor!  It is simple enough for a weeknight family meal but sure to thrill your guests at your next grill-out!

Repeat after me:  “Asian food does NOT have to be hard.”  Sure, as with any food tradition, there are plenty of recipes out there that require a great deal of time, skill, or both, and an expert cook in search of a true gourmet challenge may want to attempt them once in a while.  But you don’t HAVE to be a brilliant master chef or endure an intense labor of love to put together a delicious Asian-style dish.

I found this recipe to be incredibly easy to follow, and the results were delicious.  That juicy blend of sweet and spicy really hit the spot, and it was great for getting me out of that food rut that I had fallen into recently–yes, it even happens to me, sometimes.  (It was also a great excuse to break out the grill on a pleasant summer evening during the workweek.)
