Most people who live in Texas know that the quirkiest town we have is no doubt, Austin. Austin is a fun town with tons of food trucks, quirky places to shop, outstanding restaurants and food, and incredibly friendly people. There are lots of outdoor spaces and parks for people to gather and just enjoy life.
Recently, I traveled to Austin with my sister to enjoy some of the sights and sounds of a different, quirky city. There was a food truck, we were told, that had the best chicken and waffles. In addition to their chicken (which was juicy and tender) they sold a roasted street corn that you just HAD to have. When I ordered it, I wasn’t so sure how delicious corn could really be, but it was heavenly! I found this recipe soon after returning from Austin. So now I can experience my fun weekend away again and again by making this fantastic recipe!
