This Super Easy And Delicious Salad Is Good For You!

Wow, do I feel like I could eat a bit lighter after the summer! All those juicy BBQ meals with extra sauce and heavy desserts… And with the holidays coming up, I should definitely watch what I eat for the next couple of weeks, at least. But I don’t want to go on a diet, and I don’t want to start eating “health food”. You know, the stuff that’s supposed to be good for you but doesn’t really taste like it, haha!

I’m just kidding. I know that healthy food is a great thing and that there are actually plenty of dishes that are considered lean and healthy – yet, they taste amazing. What I decided to do to get things started is have more salads. Not the heavy, mayo type of salads but something that’s fresh and tasty.

For example this taco salad from Making Memories With Your Kids. Lovely, fresh iceberg lettuce and tomatoes, great protein from the meat and the beans, and plenty of amazing flavor from the seasonings. I could eat this every day of the week – and maybe I will!

When I was growing up my mother would make this awesome chili cheese casserole that nobody ever complained about because it was so cotton pickin’ good. It contained beef, macaroni, chili, and cheese. Yum! She would bake it in the oven until perfection and then we’d all chow down. Ah, those were the days! 

Even my dad never complained about this amazing casserole and he often took leftovers with him to work the next day. I bet my husband will do the same. So, now, I am sharing this amazing chili cheese recipe with all of you because I know you guys and gals will love it. It’s simple to make and very filling. Enjoy!

Having tacos is one of my favorite dinners. In fact, we actually had tacos last night. I cooked the beef, shredded the cheese, chopped the tomatoes, lettuce, and onions, and set out all of the condiments. Wow, it was actually quite a lot of work and a mess when I think about it haha! That’s why casseroles like this cheesy taco bake come in handy from time to time. There really isn’t much fuss.

I can’t believe how quickly this taco bake comes together. All I have to do is brown the beef and then dump everything into my baking dish. That’s it! after a little while a gorgeous and flavorful taco bake pops out of the oven. Yum!

As far as easy comfort food goes, particularly for the cooler months of the year, it’s hard to beat a good, savory soup. This Easy Taco Soup has a hearty flavor to it, and after a bit of prep,  the slow cooker does the rest of the work for you.

 

After making my second batch of spaghetti meat sauce for the season not too long ago, I was looking for something a little different. (Don’t get me wrong; I love the spaghetti sauce recipe that I adapted from what Mother used to make, but I do like to mix things up, and it would be a shame to get bored with something like that.)  This soup recipe keeps it really easy and low-hassle, and it has some of that Southwestern flavor in which I like to indulge, now and then.
