Let me ask you a question – and be honest with me here; how many brownie recipes have you tried over the years? Five? Ten? Fifty? I haven’t actually kept count but I’m pretty sure I’ve tried way more than twenty. These days when you can search the internet for anything, there are so many recipes available that it’s hard to decide between them. So, let me save you from all that trouble by telling you that this one is IT!

If you like peanut butter and chocolate, you’ll love these Chocolate Chip Peanut Butter Cup Brownies! It’s a quick way to a really rich, delicious dessert. I enjoy most all types of brownies, but I have to agree with Nutmeg here: These are rather addicting! Be sure to bring your sweet tooth when you make them, though. If you like Reese’s peanut butter cups, you’ll be in heaven with these.

If you like a little spice in your dessert, this Autumn Spice Cake is just what you’re looking for. It has just the right balance of “sweet spices” for fall and comes with a lovely cream cheese frosting. I do love fall baking season. Summer is great, but with the sweltering heat and all of the barbecue you are usually eating, dessert options can be a bit limited. Cooler weather makes for many more options for great cakes.

 

A smooth cream cheese icing makes for a nice touch for a cake with such flavor depth. I happen to think that the pecans make for a nice texture contrast, but if you’re not big on crunchiness with your cake, feel free to do without them.

This Chocolate Wacky Cake recipe may be, well, a bit wacky, but you’ll love how it turns out (and how easy and quick it is to make)! It also comes with a simple but very delicious chocolate icing.

 

I have to admit, when I saw the ingredient list, with vinegar and without any eggs (and without butter in the cake itself), I was a bit skeptical. And just 20 minutes to bake–crazy, right? Well, I’m still not 100% sure HOW it works, but it does work beautifully.

I love traveling. There’s nothing that makes me more happy than being able to experience new cultures, get to know new people and just walk around in a completely different neighborhood. The best thing about traveling, to me, is that I get to have a taste of the delicious local food. Jamaica has been on my bucket list for years – until I get there, this recipe is the next best thing!

 

Jamaican jerk chicken is a savory, exotic meal with little hassle.  It is fancy enough for an elaborate dinner but simple and quick enough to make for lunch.  Not only that, it’s healthy too! Serve this over white rice and with some roasted bell peppers on the side. This recipe generally serves about 8 people.  It is spicy but you can leave out the jalapeno to tone it down.

If you want a nice Mexican meal without any hassle, this Chicken Fajita Sheet Pan Dinner is perfect for you!  It makes a bunch (though you can readily expand it to serve more, if needed), and you can have it prepped and cooked in well under an hour.  Sounds like the perfect thing to serve at a family gathering!

 

Fajitas have always been a popular meal choice for me and the rest of my family when we go to Mexican restaurants.  Even if you’re REALLY hungry, you’re usually served more than you can handle, and it’s hard to beat that blend of veggies, meat, and spices.  They’re great to eat for lunch or dinner and go nicely with a little Mexican rice and refried beans. This Chicken Alfredo Baked Ziti recipe gives you all of that wonderful, creamy Italian flavor with little hassle or time investment.  It is also very inexpensive to throw together. It’s a great kid-friendly recipe that would also do wonderfully at any more formal gathering.

Italian cuisine is perhaps most famous for all of its red sauces and delicious tomato-based recipes, but those wonderful white sauce-based dishes shouldn’t be neglected.  In Italian restaurants, I’ve probably ordered chicken or seafood alfredo more than I have the usual spaghetti or lasagna (though I love those dishes, too).

It really is amazing how easy it is to put a gourmet dish like this together–and how inexpensive!  Ingredient cost for this recipe is about $16 for a meal that makes six to eight servings.  (You’ll have to spend more if you don’t have any olive oil on hand, but you will have plenty left for future use.)  It really is hard to beat that for a really good meal.

So many Creole and Cajun dishes make for great comfort food, but they are all really complicated and take forever, right? WRONG! With this Creole Jambalaya recipe, you can bring all of the savory, rich flavors of Louisiana into your home in under an hour. Though I don’t think that the Gulf Coast is quite as different from the rest of Mississippi as some people say, there is no denying that that proximity to New Orleans has had an effect on the locals’ food choices. Though I live a good bit north of the Coast now, after a few rainy days in this small college town, such as we have had here recently, my Deep South roots really come out in some of my comfort food cravings. I have so many fond memories of Mother slaving over a richly aromatic seafood gumbo…even on a summer day, when it was storming outside, I loved to curl up under a blanket with a full bowl of gumbo and feast on its delightful smells and beautifully mixed, spicy Louisiana flavors.

I didn’t really feel up to a full day in the kitchen, though, and let’s face it:  making a good gumbo can be really hard and time-consuming. Thankfully, there are recipes like this delicious Creole jambalaya that can be made in under an hour and still offer all of that uniquely comforting, gourmet New Orleans-style Deep South flavor to your dinner table in under an hour. (I ate plenty of jambalaya growing up, too.)
