There was a time when I used to think applesauce bread was a mandatory item at the holiday dinner table. Don’t get me wrong – I still think it’s delicious. But after my mother mentioned this recipe, it changed my life. You think I’m being over-dramatic? Well, you haven’t tasted this cranberry bliss bread yet.

If you’ve ever had the pleasure of enjoying a Starbucks cranberry bliss bar, you may have an idea of how awesome this recipe is. I mean, you get the same, incredible flavors – but a whole loaf of them!

They say the holidays are about sharing, but I kind of don’t feel like sharing a single piece of this loaf. I think I’m just going to make 2, right away. One for the guests and one, all for me! The bread itself is super juicy and tasty on its own, but when you cover it with frosting, decorate with craisins and drizzle with white chocolate? It. Is. To. Die. For. It doesn’t matter how many helpings you got at dinner, there’s always room for a slice of this!

Raise your hand if your favorite thing about Thanksgiving is the food? I bet there are like a gazillion hands raised right about now.

Amp Up Your Breakfast With This Amazing Recipe!

I was strolling towards the mall just a couple of weeks ago with a few shopping bags in hand when I smelled the most delicious smell I have ever encountered in my life. Since I was passing by the food court with so many places to eat, I couldn’t determine which among all of those was the one who caught my attention. But since I was a bit tired from all the walking and shopping, I decided to take a break and sit down on one of the metal benches. It felt good to sit down and take in the aroma of that delicious food!

As I was busy looking at my buys, there was that smell again. When I looked up, I immediately realized that it was coming from a bakery vendor just a couple of feet away from me.

The vendor was selling freshly baked bread and I had to have a slice of that bread or I would go crazy. It was a cranberry banana loaf. One bite was enough for me to buy a whole loaf which I could bring home.

I didn’t know cranberry and banana could taste that good in a bread! It’s like a match made in heaven! It tastes really good with tea or coffee too. You’ve got to try this recipe!

I am a huge fan of fusion meals. Not only fusion as in two countries’ flavors fused into one dish, but just opposites in one meal. For example, salty and sweet. That is such a cool combination to me and I really cannot get enough of it. I love to chow down a good dish of salty and sweet pretzels for example. There is nothing better than a pretzel dipped in some milk chocolate. Yum, yum!

 

Now, since I love this so much, I really enjoy playing with different flavors to achieve it. We have something like this in our Cuban culture with fried ripe plantains. They are basically sweet bananas fried to golden perfection and eaten along with our normally savory meal. It adds a touch of sweetness to our meals that is so cool! So, I decided I had to get something similar but with more of an American style meal which is how I came up with this cranberry turkey salad. It is cold and has the mix of the salty turkey with the sweet cranberry. Together, it is the perfect topping for a green salad or filling for a hearty sandwich. There are so many yummy things to be made with this one!

The other day I was enjoying a homemade salad (you know, still trying to shed some weight from the holidays) and was admiring all the yummy toppings I had on it. I had a bit of honey glazed sliced almonds, some croutons, some Craisins, sesame seeds and a bit of shaved cheese. All of it added the perfect balance to a somewhat too healthy meal.

 

That got me thinking… what if I did something creative to this dish to make it even better? Say I eliminated the lettuce and added butter instead? Yeah, I know I just threw healthy out the window, but who cares?! This is an awesome idea so far. Maybe instead of almonds, I will throw in flour. And instead of croutons, I will add some oats. Oh, and in place of cheese, I add some vanilla. Yeah, I know I have completely steered away from my healthy salad, but now I have COOKIES! Throw all these ingredients together and I will have made the perfect oatmeal craisin cookie. Together, these ingredients make the best treat (and much better than a salad, for sure!). Do not be afraid to play with your own ingredients, you might get results like mine!
