Have you ever come back from work and just sighed at the thought of cooking dinner for your family? It happens to me all the time. Occasionally things just get a little overwhelming and cooking is the last thing on my check list (or it doesn’t make the check list at all…) I know it’s fine to opt for takeout but if you do that several times a week, it tends to get expensive. And often, a bit unhealthy, too. Enter – these super easy crockpot recipes!

I fell in love with my slow cooker the day I got it, and it has made me feel like a better mom. Seriously, a kitchen appliance that makes you feel good about yourself – how awesome is that!

I used to make mostly meat stews and soups in the slow cooker but it can do so much more. These days I use it to make desserts (cakes, even) and all kinds of exotic dinner recipes. I bet there are several recipes on this list that you didn’t even know you could make in a crock pot!

Hearty crockpot chili is the perfect meal on a cool day.

When i was growing up my mom always had the slow cooker fired up with something good cooking inside. She did this quite often during the fall and winter months. We lived in Michigan so hot comfort foods were a must during these times of the year.

I loved adding shredded cheddar cheese, sour cream, and a hint of salsa to my chili. My sister would use tortilla chips to scoop her chili up with. We all had our own little ways of eating this yummy dish. I wonder what yours will be?

A wonderfully easy chili recipe that can even be made overnight while you sleep.

It’s true; you can add everything in your slow cooker at 8 or 9 pm and let the chili cook overnight.

I think that sounds like a fabulous idea! You have lunch or dinner all ready for the next day without any hassle. I’d just turn the crock pot down to low once you wake up to keep the chili from scorching.

My husband and kids love eating this chili over macaroni noodles. We call this dish “chili mac”. It is actually very good but I prefer my chili with cornbread and lots of sour cream and shredded cheese.

A recipe that you can just set and forget, this slow cooker chicken chili is makes for the perfect healthy meal.  Top with a dollop of velvety sour cream, and you ahve yourself a meal!

This recipe serves up to 8 people and is ready in about 3 hours, after cooking on low.  Don’t worry about having leftovers, they make for a great workday lunch, just make sure you don’t put the tortilla chips over the entire crock pot.
