Easy. This recipe is astoundingly EASY to make. If you can turn the dial on your slow cooker, you can make this delicious meal. Have you ever heard the term “dump it” when it comes to cooking? Well, that’s all you have to do when throwing together this evening meal idea. Dump three ingredients into the pot, set it, and forget it!

 

Ranch pork chops are seriously the pigs squeal, folks. It’s simple to make, and it tastes like a dream come true. Whenever I make this pot full of awesome, my family just about loses their minds with excitement. In fact, I can always expect a few neighborhood kids over for dinner on ranch porkchop night. I don’t know if this is a good thing or a bad thing haha!

This French Onion Chicken Noodle Soup Casserole is a simple but filling recipe that makes for good comfort food on a hectic weeknight. It requires just half a dozen ingredients and takes just half an hour to cook. Now, I don’t know about you, but I think a 30-minute meal is the bees knees!

 

Chicken noodle soup is practically the definition of comfort food – or the definition of comfort itself, for that matter. How many Chicken Soup for the Soul books are there now, 200 or thereabouts? Of course, you don’t want the same thing all the time. This casserole takes the classic yummy flavor of chicken soup and gives it a nice, refreshing twist. The best part is, this recipe works as a great base for any alterations, which you can make easily!

This Chicken & Rice Casserole is versatile, hearty comfort food, great for family meals or potlucks. Baking time is about 45 minutes, with another 20-25 minutes needed for prep.

 

Mother often made a basic rice casserole as a side dish for her dinners, and simple though it was, it was tasty enough that I often asked for seconds. As it turns out, if you throw in some chicken and cheese into the mix, you have a rather savory and filling one-pan meal. Yum!

A Down-Home Classic, Made Easy, With a Little Twist

Love chicken pot pie but aren’t so fond of the crust? Or maybe you don’t mind the crust, but your little ones do? Want something tasty and easy to make? Try this.

When I was little, I loved the flavors in the pot pies that Mother brought home from the freezer section at the supermarket. (My favorite brand was Marie Callender’s.) For a long time, I wasn’t very fond of the crust, though (it didn’t help that the edges of the crust burn so easily on those frozen ones if you cook them in the oven, as intended). Once I got a little older, I came to like the crust more. But when I would ask Mother, “Why don’t you make something like this yourself?” she usually would say something along the lines of “Well, pastries just aren’t my strong suit. All that effort it would take to make a good crust, I’d just rather do something else.” And this was from someone who had no qualms about spending two hours standing over a stove to get a roux for gumbo just right, the old fashioned way.

Even some really good cooks just aren’t very confident about certain aspects of baking. And some people (children especially, I guess) just aren’t crazy about the crust on a pot pie, even if they like everything in it and love how it tastes otherwise. Solution:  drop that crust and break out your slow cooker.
