I love eating all kinds of batter and dough; that’s why even though I’m not a kid anymore, I still love to watch and “pester” people baking in their kitchens. I always dip my finger on the mixture when the baker is not looking. And since my best friend makes the most scrumptious chocolate cake, she is always my victim. Whenever I go to her house, I force her to bake something. Granted, she always catches me dipping my fingers in the bowl, which is why she just sets aside a small amount for me to nibble on while I let her bake in peace.

 

Some of you might remember that chocolate cake from the movie Matilda. My best friend’s cake looks better than the one Bruce devoured. I also think it even tastes better than that. Yeah, yeah, give me the Best Friend of the Year award, but joking aside, my best friend’s cake is so moist and soft even after refrigerating. Trust me, I know, because I always take home a ziplock full of chocolatey goodness and store them in my fridge for days. It also has the most delicious chocolate frosting—it’s not too sweet. Since my best friend is a bit busy lately, she doesn’t have time to bake anymore. I found a way to recreate her recipe. This one that I found over at Food.com has similar tastes but different ingredients.

When I was young, I really wanted to learn how to make southern dishes. To start, I wanted to make biscuits. This was before the time of Pinterest and online recipes, so I had to find a real cookbook. I asked my mom for a cookbook for Christmas and she gave me an Anne of Green Gables one. It had all the recipes from the movies and in that was an amazing biscuit and gravy recipe.

 

I decided I would skip the gravy because all I wanted was buttered biscuits. I bought buttermilk for the first time and threw away the first bottle after I opened it because I thought it was spoiled and smelled bad. After buying a second, I noticed it was the same so I asked and was told that is how it was. Definitely a lesson learned. I made buttermilk biscuits with a 3 inch cutter and baked them until they were light and fluffy. It was a yummy treat to enjoy in the afternoon with a cup of warm tea. Lathered with butter, these are wonderful. They are just as good sliced in half with some fruit jelly or cheese. This has been my go to recipe ever since I discovered it.

You Won’t Believe How Delicious This Cake Turns Out!

No, I am not kidding. It’s totally possible to make this outstanding chocolate cake without a single egg or any dairy products. And no, it won’t turn out dry or tasteless or whatever you think vegan friendly cakes taste like! In fact, I would go as far as saying this is one of the most delicious chocolate cakes I’ve ever had. That icing alone is to die for – and yes, you can make that without butter, too!

This cake is surprisingly easy to make! With a quick 15 minutes of prep time you’ll have it in the oven, baking for 30 minutes and then you just cover it with the frosting. The most difficult part of this recipe is waiting for the frosting to set before you cut the cake and eat it all! You may want to invite your friends over, unless you’re willing to put yourself through the test with your self control. I may or may not have eaten half of this by myself, but let’s not get into that.

What goes great with your morning cup of coffee? COFFEE CAKE! Seriously, never says morning pick-me-up like a steaming cup of Joe and a slice of sweet blueberry buttercream coffee cake. This recipe calls for fresh blueberries, so don’t worry, you’re still meeting your nutritional needs. “wink”

Rich, creamy, smooth, and simply delightful, banana pudding is a family classic at our homestead. Whenever we announce that there will be “nanner puddin” served after dinner, you can bet your bottom dollar that the kiddos inhale their veggies like nobody’s business. This recipe creates such a velvety texture of sweet pudding and bananas topped with Cool Whip whipped topping. Don’t forget the crunchy Nabisco Nilla Wafers…mmmm!

Nosh on this dessert after dinner, as a snack, or make it for a party. It was a major hit at our son’s fourth birthday extravaganza. Honestly, I think the kids wolfed down the BP more than the ice cream and cake! I had to make sure to hide a serving for my husband and myself. For real, this banana pudding recipe is THAT good!
