Head For the Border Without Leaving Your Kitchen When You Whip Up These Favorite Rolled Up Dinner Delights
What could be better than beef and refried beans wrapped in a soft, flour tortilla for dinner? This easy casserole combines all of those elements and more. It’s simple to whip up, bakes fast, and is a crowd-pleaser guaranteed. You can expect there to be little to no leftovers in the end, as everyone will have seconds easily. Whenever I make this dish, I provide chopped tomatoes, jalapenos, lettuce and of course sour cream. You could also go the extra mile and make some guacamole if you please. Half of my family loves it, and the other half is not too fond. Just make sure to store leftover guac drizzled with lemon.
My entire family loves this dish with zero complaints. I think it’s because I leave off all the above mentioned toppings and let them pick which they like. Whenever I mix them in, they aren’t huge fans, but still eat it reluctantly. Over the years, you just kind of learn to cook for picky eaters!
