Creating hot and comforting casseroles reminds me of my childhood.

My mom used to make casseroles several times a week when I was a child. We were a family of seven and mom sure could make the food bill stretch when she needed to. Often times, mom would use the leftovers from the night before to craft a delicious casserole the next day. In Michigan, the winters would get bitter cold so it was always nice to come home from school to a hot and hearty casserole. I can recall getting off the school bus and stepping into the house only to be welcomed by mom’s smile and the scent of a piping hot casserole cooking in the oven.

This recipe is an all-time favorite at our house!

Aunt Christine loves to experiment with food. Some of her concoctions are really good, like over-the-top good! I saw her in action for a few times already, and when she’s on a roll, we will have a really good dish served to us. However, there are times when she just seems to put everything together without thinking about how it tastes. She once made a casserole out of spaghetti leftovers and blueberry jam. While it smelled okay, it didn’t taste as good.

But we still had to eat it because we’re taught to appreciate everything that’s been served to us. But I have to admit that we save our children from such a situation and just allow them to eat breakfast cereal whenever it happens. We’re sneaky parents, yes. This chicken noodle casserole recipe reminds me of Aunt Christine’s best experiment dishes.

While this is not an unusual dish, it reminds me of those family reunions. Everyone just feels happy and comfortable, even when eating such an unusual dish. It’s true that when you eat a dish with your family, it always tastes a hundred times better. It’s family. Family will always be comfort, security, and fun.

Everyone knows chicken noodle soup warms the soul, but it really ignites a fire when you bake it in a cheesy casserole, with a butter crunch topping.

One of the best things about this recipe, is that it can be prepared ahead of time, so if you’re a busy bee, fear not – just pop it in the oven when you’re ready! This dish serves 8 and is so easy to make, you’ll find yourself wanting to rinse and repeat again and again. Here’s what our friends over at 12 Tomatoes had to say about this dish:

Chicken noodle soup is the quintessential American comfort food and somehow always manages to make us feel better, whether we’re under the weather or just had a rough day. While we love the traditional soup, we’re more a fan of hearty casseroles, so turning this dish into a smooth and cheesy baked meal was a no-brainer!

I have to agree… I’ve always liked chicken noodle soup and I think it’s one of the most comforting meals on the planet. However, there’s just that extra something about casseroles and baked meals! Even when you think it’s impossible to improve a recipe – just turn it into a casserole and it’ll taste twice as good!
