Every single person in my family prefers a confetti cake for their birthday, even my husband. I assume because it’s festive, because to me it tastes just like a white cake. Of course I’d never ruin that love for them and I happily make this for each one of them every year. Plus, I won’t deny that the fun appearance is cute. It kind of makes you feel like a kid again.
This last birthday belonged to my daughter, she just turned 20! Even though she’s married and on her own I still make her a birthday cake, and I decided to try the confetti cake from scratch. It turned out much more delicious – which is no surprise. Truthfully, it wasn’t much more effort either; it just uses your favorite yellow cake recipe. You could easily still use boxed if you so choose and save on time.
