When I was younger, I was always pretty partial to soups.

I did not want anything to do with them because they reminded me of baby food.  Being the oldest of five kids, I always wanted to stay away from anything that would make me feel like or look like a baby.  I figured soup was that so I never ordered it unless I was forced to.  My mom tried countless amounts of times to get me to enjoy a good hearty plate of soup, but I always refused.  I would even skip lunch so as not to drink a soup.

Fast forward a bit and my new favorite restaurant is Panera.  And my favorite item on their menu is Broccoli Cheddar soup.  Ironic huh?  Yeah, I thought so, too.  These days, I have soup in general about three times a week and at least one of those times it is broccoli cheddar.  It has become a favorite that never gets old or boring.

I have tried chicken noodle, autumn squash, and creamy tomato.  All good, but they get boring.  Yet broccoli cheddar never does and I love that about it!

If you’re like me, eating broccoli might seem more like a torture session than a time of nourishment. I am not a fan of the little “green trees,” but as a mom, I know I need to set a good example and wolf them down now and then. That’s why I am so thankful I came across this recipe for broccoli cheese soup!

 

Instead of going at it alone, I get to eat my broccoli as they swim in a sea of savory cheese and spices! Talk about relief. My entire family loves eating this easy-to-make soup, especially when the weather is particularly chilly. That’s why I freeze a lot of my summer broccoli harvest. It’s great to taste the essence of summer during the fall and winter. You can also use broccoli from the farmer’s market or grocery store.

One of the most delicious flavor combinations has definitely got to be broccoli and cheese…..they just seem to go so well together.  With it being a little chillier at night, whip up this recipe to warm your tummy and soothe the soul.

This recipe serves about 4 people and is ready in under an hour.  Serve with a side of crusty french bread to make a meal out of it!
