Just Like Granny’s!

Have you ever heard of someone being insanely goofy because of a muffin? I am pretty sure you haven’t. I have though, and it just happened a couple of weeks ago at one of my friends’ house. It was a simple get-together where we just spent the whole day talking and telling corny jokes that we would laugh at anyway just for the fun of it. Lana wasn’t in the best of moods that day. And since we’re friends, we knew when to stop bothering her. While we were enjoying the day and the snacks being served to us, she was quietly doing something with her phone.

A couple of hours later, our friend brought out freshly baked blueberry muffins from the kitchen. The wonderful smell filled the whole living room and we were all enticed so we just started eating. Lana picked one from the basket and started eating too. I mean, who could resist that aroma?

A few minutes later though, Lana just started smiling and laughing as if the bad mood didn’t even happen. She even joined the conversation and was laughing and joking with us. We couldn’t find any explanation other than the blueberry muffins. But then again, that taste will surely lift any mood.

Quick Tip: Sprinkle flour on the blueberries and shake it up. Then shake off excess flour and put it in the batter. This prevents the blueberries from going to the bottom of the muffin when it cooks.

Breakfast Or Dessert? It’s Up To You!

I love all-in-one stuff. To me it’s all about saving time and money.

Whether it’s haircare products or clothing – if it works for more than one purpose, you can count me in. I’m the same way when it comes to food. I love anything that can be made in one pot only, and I also love recipes that are great for more than one meal of the day.

Take this blueberry muffin bread, for example. It makes the most delicious breakfast ever, and you can serve the rest of it for dessert that night (that is, if there’s any of it left…) Heck, I’ll even have this for lunch and dinner, it’s so delicious! I would call this a breeze to make, with only five minutes of prep time. And just look at how beautiful it is! Almost too pretty to eat… no, wait, I’ll eat it for sure!

I hate the mornings.  And it’s sad because the mornings truly are such a peaceful time.  You know when you wake up earlier than anyone else in the house, and it’s just…. Quiet.  You can sit by your favorite window and enjoy a book, or perhaps lounge in the kitchen and listen to your favorite radio show? Now, usually when I sit quietly by myself in the morning, I have a piping hot cup of coffee in one hand and a juicy blueberry muffin in the other. Talk about pure, unadulterated bliss!

 

Those are my favorite kinds of mornings.  It takes a lot to motivate me to get up in the morning, but these muffins consistently do it.  When I make these the night before, I know I’ve got something great waiting for me in the kitchen.  I pop them in the microwave for about 15 seconds while I prepare a drink. Sometimes, I will slather them with some butter. So yummy!

There’s nothing better than finding out a delicious treat you are enjoying is healthy for you too.  What’s also great about this recipe, is the unusual combination of flavors that make for a hearty start to your day!

This recipe yields about 16 muffins and is ready in under a half hour.  These are great for people on the go because not only is it a light and portable breakfast, it gives you a great boost of energy for the rest of your day.
