I’m always trying to find recipes for prepackaged things that my kids love from the grocery store, so I can make them at home and have them be healthier. I feel super guilty allowing them to grab bags of chips which I know are filled with preservatives and who knows what else. We’ve made granola bars, oatmeal cream pies and more from scratch, but as far as chips I figured deep frying was the only way and I just don’t like deep frying.
Well the recipe Gods dropped this gem in my lap the other day! Microwave potato chips! I was so very excited to see if they were as good as a bag of Lays or other famous brands. Guess what? They were pretty good! Who knew? So now not only can I give them a healthier alternative but we exercise portion control. I feel much better letting them have these in their lunches and as a side. Check it out!

Quick Tip: I prefer to slice these very thin, I use my mandolin slicer to do so making the entire process seamless.
