The little brother is giving his restaurant another go and he is starting it off with a bang by making chili cornbread casserole.

Who here likes cheese, chili, and cornbread? What do you think would happen if you mixed them all together into a luscious chili cornbread casserole? I’ll tell you, magic. Yes, magic in a ding dang pan, folks. I can’t begin to tell you just how wholesome, hearty, and tasty this recipe is. For one, whoever thought that a chili cornbread casserole could be savory? Whenever I think of cobblers I envision something fruity and dessert-like. That’s not the type of cobbler that this recipe is. You can enjoy this yummy dish as a dinnertime entree. This is a meal that has been permanently placed on my monthly meal plan.

Another thing that I like about this yummy chili cornbread casserole is its southern roots. This is totally southern comfort food. Now, when I made this chili cornbread casserole there were a few things that I left out because I didn’t feel like making a run to the grocery store.

I’d like to shake the hand of the man who can resist the temptation of these mini cherry cheesecake tarts because he has much more willpower than I.

There is a lot to be said about these delicious mini cherry cheesecake tarts. For one, they are made using rich and flavorful cheesecake ingredients. I love me some cheesecake, don’t you? I think I could chow down on these tarts without the cherries if I had to. I mean, the cake portion of this dessert is so rich and flavorful. I love it! Another aspect that I completely adore about this recipe is how easy it is to make. These tarts taste like they came from an upscale bakery but really, they just came from my humble kitchen 🙂

Mini cherry cheesecake tarts are the perfect dessert for serving at a church potluck or family picnic.

My sister and I set out to make our grannie’s famous layered carrot cake and what we came up with was something that she’d truly be proud of.

This classic carrot cake never runs out of style! What I mean is, even if there are a lot of new variations of cake recipes nowadays (I lost count of how many I have tasted just last year), this is still one of those cakes that you will love to come home to at the end of the day. Chocolate cakes, butter cakes, vanilla cakes, chiffon cakes, cinnamon cakes, and carrot cakes; these are some of the classic cakes that will always be there on top of the cake hierarchy list. In my family, the favorite classic cake is this good old carrot cake simply because of its simple taste made yummier by the cream cheese frosting.

My grandmother used to make the best carrot cakes. She used buttercream though instead of cream cheese frosting. Grandmother said that during her youth, cream cheese was rare, so butter was the closest thing to cream frosting she could ever make, so that’s what she always made. It was delicious, and the cake itself was moist and not oily.

But I still preferred my mother’s version because she made it with cream cheese frosting. Cream cheese frosting is truly the best frosting for carrot cakes or even carrot cupcakes. In my family, it’s always the cream cheese frosting. And believe me, whenever carrot cake is served in front of my family, their slices will be gone in minutes!

I took a drive, crossed over the PA border into Ohio and got to experience the best Amish peanut butter pie I’ve EVER had.

You guys, Amish peanut butter pie has got to be one of my most favorite desserts on the planet. It’s cool, creamy, and filled with peanut buttery flavor. Who could ever ask for anything more? Now, the peanut butter pie that this midwestern chick is used to is much richer than the Amish version I am debuting today on the next page. When my Michigander mother makes a PB pie she uses cream cheese and not vanilla pudding. I actually prefer this method because I like a richer more robust PB pie.

With that being said, this Amish version of PB pie is still super amazing. The Amish certainly have a way with desserts and this Yoder’s peanut butter pie is definite proof of that.

This is the type of Amish peanut butter pie that my husband, a Pennsylvania native, grew up eating so he was delighted when I surprised him with this dessert. Apparently, his grandma would make Amish peanut butter pie to sell during church bake sales. Fun!

Chocolate brownies aren’t only for children. Adults need ’em, too!

When my brother and I grew up, times were simpler. Our parents trusted us, and society, to travel around our little town after about age ten. We could only go if we were together though. We would hop on our bikes and go and explore. This could mean checking out little bike trails or roads that we hadn’t been on before. Sometimes we would get brave and pop into a store and do a little window shopping. The clerks started to know us after a few times. We were good kids, so we never caused any trouble.

That’s why they didn’t mind us hanging around so much. When we had some money in our pockets though, we would head straight for the town bakery. They had the best homemade desserts that I have ever tried. If we got there early enough, we would grab up one of their huge fudge brownies. They were like a little piece of heaven in our hands. The recipe was a lot like this one from Just A Pinch.

They were super cheap and super tasty. It’s a good thing that Mom and Dad never gave us more than a dollar or so, or we may have had a bit of a problem! Now that I have this recipe, I can make them for my kids and they can experience the flavor that I grew up loving so much.

Grandma had been hiding her famous scalloped potato recipe from us for decades and then… grandma passed away.

Are you curious as to what that twist may be? Well, I’ll tell you: ham! These scalloped spuds are made just like your mother or granny would make them except that ham is also in the mix. Talk about a yummy addition! The chunky ham adds so much flavor and texture to the dish that you can easily eat it as an entree instead of a side. I am seriously considering making these spuds during the holidays. They would make an excellent addition to Easter dinner. The recipe says to use russet potatoes but feel free to use any variety that you have on hand or prefer.

This recipe is for the oven but you can easily make these yummy scalloped potatoes in your slow cooker, too. I’ve tried it before and they turn out quite nice. However, you won’t get that browned layer on top like you would if cooked in the oven.
