The weather outside is frightful and I need some soup to warm me up. This veggie chicken soup is the perfect solution!
When it comes to making homemade soup I am pretty particular. I LOVE soup, especially on cold winter days, and I want it to taste just right. I am so excited that I came across this yummy recipe for homemade vegetable chicken soup over on the Rockin Robin Cooks YouTube Channel. Robin seriously knows her way around the kitchen and this soup recipe proves just that! Thank you so much for sharing your culinary talents with us Robin 🙂
Ingredients
6 – 8 chicken thighs with bone in, remove skin if needed
1 bag spinach
3 – 4 cloves fresh garlic, minced
2 stalks celery, rinsed, trimmed and chopped
1 bunch fresh Italian parsley, rinsed, big stems removed
1 bunch fresh basil, remove most stems
2 bunches green onion, rinsed, ends removed and chopped
2 yellow onion, finely diced
1 baby bok choy, rinsed, core end removed, chopped
1 can Hunt’s fire roasted diced tomatoes
Morton Salt to taste
McCormick Garlic powder
Instructions
In a large stock pot add 18 ounces of water, the chicken thighs and any chicken bones if you are using them and a pinch of salt.
Place the pot over high heat. Bring it to a boil and cover and simmer for 40 minutes.
Place all greens into a food processor and process in batches. The greens will be finely chopped.
Once the chicken is done, remove the pieces and the bones if used, into a dish to cool. With the heat over medium high heat, add the onion, garlic, tomatoes and all the greens to the stock pot.
Simmer the veggies for between 1 to 2 hours with a partial lid on the pot.
Shred the chicken with either two forks or as I did with my hands. Using your hands will make it much easier to remove any grizzle or fat you find in the chicken.
You may want to place this chicken in the refrigerator until you are ready to add it to the soup. Once you add the chicken, add salt and garlic powder (optional) to taste and stir. Taste to make any adjustments.
Let this simmer for 20 minutes or until the chicken is hot and you are ready to serve.
