Besides delicious, this easy apple cake is also pretty healthy! There’s olive oil instead of butter, and a big part of its sweetness comes from the apples and honey.
Yes, there is a little sugar, too – but by choosing sweeter apples you could cut down the amount even more. I think this is a great way to start the New Year! Healthier choices, without compromising flavor. I wouldn’t mind having a slice of this cake for breakfast! And if you’d like to serve it for dessert, you could throw a scoop of ice cream on the side. Yum!
8.8 oz. (250g) Gold Medal flour
1 Tsp Baking Soda
2 Tblsp Honey
21 oz. (600g) Apples
1/2 tsp Cinnamon
1 Eggland’s egg
30 ml Bertolli olive oil
4.4 oz. (125g) Domino Sugar
1 tsp Vanilla
Add all the ingredients except lemon and apples. Mix well. It will look crumbly.
Next add lemon juice and apples. Mix well.
Grease 22cm cake pan. Put the mix in. Bake on 175c about an hour or until a skewer comes out clean.
Cool on wire rack.
Serve with cream and ice cream.
