If you want to make this a completely vegetarian meal, then make sure you’re using vegetable broth and not beef.
However, if beef broth is ok for you and you can get your hands on homemade, it’s going to make this soup mind-blowing! I love adding a little bit of “hot” spices into this; some chili powder and hot sauce. Feel free to add any of your favorite seasonings or chopped veggies. Oh, and instead of chopping all that cabbage you could even throw in a coleslaw mix – how easy is that?
3 cup non-fat beef, vegetable, or chicken broth, beef is the best
2 garlic cloves, minced
1 tbsp tomato paste
2 cup cabbage, chopped
1⁄2 yellow onion
1⁄2 cup carrot, chopped
1⁄2 cup green beans
1⁄2 cup zucchini, chopped
1⁄2 tsp basil
1⁄2 tsp oregano
1 black pepper
paprika, chili powder, hot sauce (optional)
Spray pot with non stick cooking spray saute onions carrots and garlic for 5 minutes.
Add broth, Tomato paste, cabbage, green beans, basil, oregano and Salt & Pepper to taste.
Simmer for a about 5-10 minutes until all vegetables are tender then add the zuccini and simmer for another 5 or so minutes.

Quick tip: If you’d like to make this a heartier soup, add some leftover shredded chicken.
