Who doesn’t want to sit around on a cold day eating a casserole like this?
What is winter without a hearty vegetable meal? I truly do not know. Whenever fall and winter come around, I begin to see what I want to cook for the season. I look for recipes that contain loads of veggies and inexpensive, yet delicious meats like sausage. I also look for dishes that can all be made in one casserole or crock pot because it eliminates mess and allows me to enjoy more time in my flannels, cozy under a blanket enjoying cookies and watching a movie.
That is the best way to spend an evening in my opinion. Anyways, this year I found this simple casserole dish that truly made me enjoy my evening thanks to the ease of prepping and cooking it. This dish was made in no time with easy ingredients that I always have in the oven. It is simple to make, straightforward and totally foolproof.
It has a delicious sauce over it that gives great flavor to the veggies and also makes for a great dipping sauce for bread. It is comforting, filling and the whole family is going to love it! At least everyone in my family does, and that is saying something because they are the pickiest food people ever!
