We had gotten an invitation to go to a dinner party at a friend’s house one day a few months back.
When I looked at the date and time, I thought I had taken a mental note of it and then tossed the invite to the side. Life got busy, and I forgot all about it. When she called to ask if we were still coming, I had to admit that I misplaced the date and time. She said, “Well it’s today at five o’clock. Do you think you could bring a veggie to pass?” Oh boy.
Now I was really in for it. I hopped online and got to work looking for something to bring. I could have just opened a can of green beans and tossed them in a pot, but I didn’t want to be the one that looked unprepared. I found a recipe on Facebook for a cheesy green bean and corn casserole and I was pumped.
The best part was, I already had everything that was needed to make it in the house. There was no need to rush to the store. It went together super quick and while it was baking I had time to get ready. We showed up on time and nobody even knew that I had forgotten all about the event. Score!
