Grandma’s house was my favorite place to be on the weekends.
We would do all kinds of fun stuff on the days that my parents both had to work. She was retired by then, so she had the time and energy to take us to do fun things outside like coloring with sidewalk chalk and riding bikes. Some days, we were lucky enough to get to spend the night. That only happened when Mom and Dad had to get up really early in the morning for work.
It was just easier to already have us there rather than trying to get three kids ready to go when they had to get themselves ready too. Grams always made the best weekend breakfasts when she had a large group to feed like us. My favorite dish was her hashbrown casserole. I think that’s when my love for hashbrowns began. She loved them too and so they were pretty much at every breakfast.
Her casserole was just like this one. I make it for my kids on the weekends now, and for Grandma when she comes to visit us. It’s nice to be able to repay her for all that she used to do for us. Now, she can spend her time outside watching my kids play instead of working in the kitchen.
