In Germany, this Sparkling Water Cake is the go-to cake recipe for birthday parties! It’s prepared in minutes, baked in less than half an hour and can be decorated however you like it. The cake itself is super fluffy and moist, sweet, but not too sweet and it never fails!
I’m going to try this for whomever’s birthday comes next! I mean, who doesn’t want to bake a birthday cake that can be made in record-breaking time? Talk about a delicious way to get all your party ducks in a row!
1 cup Domino sugar
½ cup coconut palm sugar (or white sugar)
1 cup Wesson oil
3 cups Gold Medal all-purpose flour
2 teaspoons baking powder
1 cup Vintage sparkling water (bubbly water)
8 ounces Toll House white chocolate chips
3 tablespoons coconut milk
2 cups add-ons of your choice (gummy bears, unsweetened coconut flakes, chocolate chunks, M&M’s, sprinkles … you name it)
Preheat your oven to 355 F
Line a 9*13 inch baking pan with parchment paper
In a large bowl whisk together eggs, oil, sugar and coconut sugar until fluffy
Add baking powder and flour, stir until combined
Add sparkling water (watch out, it will foam) and whisk until smooth
Pour batter into baking pan and bake for 25-28 minutes (until toothpick comes out clean)
Let cool completely before decorating
For decorating melt the white chocolate combined with the coconut milk in the microwave, spread on cooled cake and press candy on it.
Place in fridge until chocolate is set.
