Taco salad is the perfect go-to meal when you’re in a bind.
I don’t know how many times I’ve lost track of time and before I knew it my husband was on his way home from work and I had nothing ready for dinner. In these instances, I need to whip up something filling, tasty, and fast. That’s when taco salad comes into play. This recipe isn’t for a giant batch of taco salad where you need to spend an hour in the kitchen chopping up vegetables. I like to think of this version as a more expedited recipe if you will.
