If you’d like to make this leaner, you could choose ground turkey and low-fat cheese for this. Sometimes I choose diced tomatoes with herbs, and I occasionally I add a little taco seasoning, too.
The prep work doesn’t take long, just brown the beef and throw all of the ingredients in the slow cooker. After 3-4 hours you’re going to have a wonderful meal ready – serve with some salad and dinner rolls on the side, and you’ll be sure to get some extra hugs and kisses!
1 lb ground beef
2 cans (14 oz) diced tomatoes, drained
3 cups shredded cheese
2 lbs frozen shredded hashbrowns
3 Tbs. Land O’ Lakes butter, melted
Salt and pepper, as desired
Brown and drain your ground beef.
Mix all ingredients together in a large bowl.
Spray slow cooker with non-stick cooking spray.
Place mixture in slow cooker.
Cook on LOW for 3-4 hours.
