Ladies and gentlemen, what you’re about to witness may be the very best chicken and dumplings recipe ever known to man. My family sure is crazy about it, and so is everyone else that ever happens to come by when we’re having this classic comfort dish! I always make a double batch – I know people are going to want seconds (or even thirds), and I’d like to have some leftovers for the next day, too!
I believe this recipe is very close to the one my late grandmother always made. Unfortunately, her recipe has gotten lost over the years but my mother agrees with me that this is as close to her old recipe as it gets. And we all know that old-fashioned recipes are always the tastiest, don’t we?
I cannot imagine a better way to warm up after a day outside in the chilly weather, than a big serving of chicken and dumplings. There is something so very cozy and comforting about it! And with a recipe like this one, you will double the pleasure.

It is better if you use a fat hen. Boil till tender with salt and black pepper. Regular canned biscuits make good dumplings. Just dip them in flour and mash flat then tear in smaller sizes. Boil slowly until you get about 3 cans of biscuits added. Put a lid on pot and simmer for about 20 minutes. Have enough liquid in pot that they don’t stick. Stirring too much tear up the dumplings.
Linda Paddie is right. Always use a hen, not a chicken. The older the bird is, the more flavor it has and hens are perfect for this dish. I’m with her on the canned biscuits for dumplings too. In my family we also put a can of Carnation Evaporated milk into the broth as well as a few boiled eggs, cut up chunky.
Why leave out the dumplins to have mashed potatoes? In Indiana we love our chicken and noodle or dumplings on top of our mashed potatoes. It’s called comfort food here!
the best dumplings are pieces of canned biscuits. I hate when the dumplings are rolled iut pieces of dough. they’re supposed to be fluffy not flat.
We always made our dumplings with bisquick. My partner made them with biscuits or tortillas.
A true southern dumpling is rolled out thin and has no bake powder in it they are not supposed to NE fluffy..it’s not chicken and nasty boiled biscuits it’s called chicken and dumplings because a dumpling is like a noodle or a type of noodle it is not a fluffy ball of dough yuck exclamation
