My kids play soccer, and for any parent that has a kid in soccer, you know what that can mean.
Long Saturday tournaments, on top of regular practice and weekly games. Now, when I say long Saturday tournaments, I mean they start in the morning, and you are lucky if you are leaving there by dinner time. That results in hot dogs from the concession stand for lunch and a drive-thru window or take out pizza for supper. So, I like to start off the day with a good breakfast. It’s important to me that we get at least one home cooked meal in each day, and this bacon and potato skillet is usually the one I make on these super busy weekends.
It’s really filling, and everyone in the family likes it. There are plenty of carbs in there to help my kids power through their games, plus I can add in some veggies in order to not only make the pan bigger, but also to get the nutrients in that we all need.
