The other day, my youngest son came up to me and excitedly asked what I was serving during our annual Fourth of July BBQ.
He is so much like me; only excited about the grub haha! I gave him the short list of items that I had going off the top of my head. When I came to the potato salad he sort of turned his nose up a bit. I asked him what the problem was and he said that I always put waaaay to many eggs in the salad. He said he would leave them out altogether if it were up to him. I placed my hand on his forehead to check for fever.
The kid liked eggs yesterday so I don’t understand how a person’s taste buds can change like that. Anyway, I told him I’d make him a small bowl of this yummy eggless tater salad.
After tasting the potato salad I decided to make a big bowl because it turned out to be insanely good…even without the eggs.
