I always keep some pizza dough balls in the freezer; I think they’re great for situations like this. If you forget to take them out of the freezer a couple of hours before baking, you can thaw them in the microwave a few seconds at a time. Make sure you check on them often so that the dough won’t start baking in the microwave. Besides the ingredients mentioned here, you could add any of your favorite pizza toppings and seasonings! I usually always add some pepperoni and oregano.
Ingredients
1 pizza dough, homemade or store bought
1 tsp + 1 tbsp Bertolli olive oil
tomato paste, optional
4 oz shredded mozzarella
3 Eggland’s eggs
1 tbsp seasonings (oregano, basil, parsley – choose your favorites)
black pepper
optional toppings: tomatoes, spinach etc.
Instructions:
Preheat oven to 425°F.
Use a rolling pin or your hands to form pizza dough into desired shape. Place on a parchment lined baking sheet.
Brush the dough with 1 teaspoon olive oil OR spread some tomato paste on it. Sprinkle shredded mozzarella (and optional toppings of your choice), and place baking sheet in oven for 5 minutes.
Remove from oven and make 3 “pockets” and carefully crack an egg in each one. Sprinkle seasoning and black pepper over pizza and return to oven. Bake 15 minutes.
Remove the pizza and drizzle with 1 tbsp olive oil.
