Yum, yum, YUM!

We all know the best part about visiting an IKEA store is that you get to have some of their tasty Swedish meatballs. I’m the lady who couldn’t care less about new furniture or kitchen cabinets – nope, you’ll find me right there, stuffing my face with the meatballs while everyone else is running around the store, finding great things that make their homes look beautifully designed and Scandinavian. Nothing wrong with that – in fact, my home could use some of that magic, too.

But when I get to IKEA, I just can’t help myself. It’s like the meatballs have a voice and they’re all calling for me! This recipe reminded me of one of my trips to IKEA and I was thrilled that I can now bring those flavors into my kitchen. Without having to drive to another city, I might add!

This Swedish meatball noodle bake is awesome – it’ll be ready in less than an hour and it makes 8 servings! That means it will easily feed even a larger family – or, you could double the ingredients and bake this in two dishes. The more, the better, if you ask me!

Once every two weeks or so I get a request from my little one to “please mommy make the cabin dinner again”

The first time she said that, I had no idea what she was talking about. I mean, sure – the meals I make are not exactly Michelin star restaurant-style, if you know what I mean, but I wouldn’t actually call them cabin meals, either. To me it sounded like something that comes out of a box when you’re on a flight to a tropical destination. And NOT in first class.

After a couple of questions I was able to find out it was cottage pie she so desperately wanted me to make! It really has become her favorite meal, and whenever we are having mashed potatoes it goes without saying that there will be cottage pie the next day.

Sometimes I even have to make mashed potatoes just for this dish – I don’t mind, because I see how much she loves it. I’ve tried several recipes and this one never fails. I would highly recommend making a double batch – you’re going to want to have some leftovers for lunch the next day!

So Yummy, You May Not Want To Share!

If you’re anything like my husband, you make most of your summertime meals on the grill. I always joke that as soon as the first spring days are here, he sets up a big BBQ and it doesn’t stop until the rainy fall days force him to move back inside.

Now, I’m not complaining – he makes absolutely delicious dinners on the grill and I only have to whip up a quick salad to go with them! But I have to admit at some point you kind of want a little change, after you’ve tried your usual grilled ribs, chicken and steak (and all kinds of versions of them). So I thought I’d surprise my husband with a new recipe and give him a day off of cooking.

These tasty kebabs are so easy to make, you won’t believe it. I wasn’t able to find ground lamb that day but I did have plenty of ground beef. I also didn’t use fresh mint, since my husband is not a great fan. But even with these changes, the kebabs turned out super delicious!
